While visiting Austin stopping in at Torchy’s for a sampling of tacos and queso is a must! The tacos are all super interesting but their locally famous Tex-Mex queso is what kept me coming back (three times over a week long trip)!
Although they keep their recipe under a lock and key, I think I came pretty close and tried to make my version a bit healthier!
- 1 8oz package of Velveeta Cheese, cubed
- 1 small can green chiles
- 1 small can salsa of your choice
- handful of chopped onions
- 2 garlic cloves, chopped
- garlic salt, pepper
- 1/2 avocado, cubed
- hot sauce, to garnish
In a medium saucepan, sweat onions with a pinch of salt until translucent and add chopped garlic, stirring for one minute. Add green chiles (with juices), salsa and stir. Add Velveeta and spices and stir until melted completely. If you are feeling extra indulgent, add a few tablespoons of heavy cream but I skipped this part… Serve immediately garnished with avocado and a few splashes of hot sauce!
This is not a low calorie appetizer but I promise it’s worth the indulgence!
